Short Summary
The goal of the program is to convey to the participants the most important knowledge and experience in the field of Slavonian kulen production technology, from raw materials and recipes to production technology, the basics of hygiene and sanitation with a special emphasis on product quality and safety, as well as sensor errors and product spoilage, or to train them to prevent and remove it by optimizing technological parameters and process conditions and applying HACCP. Also, as part of the education program, participants would be trained in sensory evaluation of products.
